Meet Laurie – my amazing sister-in-law!
She is a fantastic cook, chef and baker. We visit her just to taste her yummies (hee hee). She quilts, sews and builds cabinets and shelves. Laurie also teaches music and technology to a bunch of teenagers – that in itself is talent.
These are some of our favorite recipes from Laurie’s kitchen……
Laurie’s Broccoli Soup – my kids love it!
1 can chicken broth or 2 cups of water with 2-3 boullion cubes
1 ½ lb fresh chopped broccoli
1 large diced onion
1-2 chicken breast cooked and chopped
White Sauce
½ cup butter
½ cup flour
1 tsp. dry mustard
dash of pepper and salt
4 cups milk
1 ½ cup grated cheese
Cook broccoli and onions in broth until tender.
Add cooked chicken.
Melt butter in a separate pan and slowly stir in flour and seasoning.
Slowly add milk – cook and stir until thick and bubbling.
Add white sauce to broth and veggies.
Add cheese and heat until melted.
Laurie’s Kentucky Biscuits – my hubby’s favorite for over 16 years
2 cups flour
2 ½ teaspoon baking powder
½ teaspoon baking soda
dash of salt
1 Tablespoon sugar
½ cup butter
¾ cup buttermilk
Mix dry ingredients and cut in butter.
Add buttermilk and knead lightly.
Roll out into a 6” X 6” square and place on a greased cooking sheet.
Cut dough into 12 even squares but do not separate.
Bake 15 minutes at 400 degrees.
Eat with honey and butter – mmmm.
